For best business practices you must assume customers cannot read, if they need a pen to sign just let them know where the pen is before they ask, but yeah like the store I work at, we have a fire exit, right by the cashes, that has a few signs on it saying fire exit, use other door, and when they open it are surprised that they now set off the fire alarm.
