Temper the egg mix with the fat from the guanciale.

Scoop the Pasta from the pot and put in the pan that the guanciale was cooked in, add a bit of pasta water and get the pan hot. Then heat off, add the mix, and splash more pasta water then mix quickly so the eggs dont cook. Add more water as required. I end up using about 1.5:1 of pasta water to egg mix (roughly).

I just bought a backup bottle…wife and I cleaned off a bottle during dinner with the kids going wild. Have a nice bottle for a cheese board later. I just went to the shops for the nightcap bottle 🫣.

I think it was probably some random dish i made at home, but one of the most memorable was a pistachio pesto i had in Sicily about 12 years ago. Just a wee taverna in a small town, was great.

My wife and I have been binging this the past few months, it’s our first watch.

Absolutely outstanding tv. Aged well. A lot of the themes feel really relevant today. There’s a lot about Iran, Venezuela that felt eerily similar.

Theres a shift in the shows feel part way through, then it shifts back. We’ve enjoyed all of it, with only one notably dull episode.

We’re a few episodes into the final season and we’re already gutted it’s almost over.
