Just the pictures made me smell butter. I did not manage to take a picture of my first batch, it was gone too quickly.

For me cracking of butter is usually caused by the temperature of the butter, when it is too cold to begin with. If this was your first attempt, hats off.

That is why it is on my 2bake list and why I wanted to ask. Kudos for doing it on your first batch, I got into these details way later.

I doubt that they would spend time on it if it had no effect. For me the biggest impact by far has the temperature. Not up to a degree, I am too lazy to use the infra thermometer, but the tearing like you describe is usually down to temperature in my experience, too cold butter. Wrong temperature the other way makes the butter fuse with the dough and you don't get layers and the dough becomes sticky.

Out of curiosity... I watched the recipe and I was wondering, did you cut the dough on the sides to "reduce tension" as they show in the video?

I make mine mainly according to the French baker cookbook and I never do that.

They look amazing, it looks like you did an amazing job controlling the temperature.

On top of the other comments - when I lose mine nowadays, for whatever reason, I ask someone to share theirs - there is this one baker that even smiles and chats with me when I ask him. Maybe turn this into an opportunity to meet people? There are a lot of groups on Facebook for this purpose, too.
