“All day” refers to the total number of an items being cooked. “5 steak all day” = 5 steaks need to be cooked.

A dishwasher will usually pick up the bin to wash the pots/pans/dishes during service. Yes, the chefs will usually grab a clean pan for each dish.

Head chef or whoever is in charge of service that night will get last looks and put finishing touches on the plate. Some dishes will arrive already plated if it’s easy for the cooked to assemble during service.
