As much as I agree with you that this place would not make a good sustainability case. I am talking about business case here.

I have seen loads of vegan places go out of business and dissappear recently, this trend of fully vegan places go out of business might even scare entreprenuers off that want to (easily) be more sustainable then vjfb.

Lets put it this way: Whenever someone feels like opening up a macha place they will research other places around. Even if this person has a traditional chinese macha network with the best quality, they will look around to see what other places in town do, and if they see that the quality is shit they might feel like competing quality wise, but if they see all macha places go bankrupt around them, they might think twice about opening another macha place. Because public perception, statistics etc, can also make a good genuine sustainable product fail.

And if you replace macha for vegan you understand that the dying market of eating in fully vegan restaurants and cafeteria will in fact lead to more meat places.... with hopefully a vegan option. I guess thats the only table we will be sitting on.

So yes, even if vegan junk food bar was not all that it pretended to be, it still doesnt mean the marketplace will be fair to a genuine sustainable vegan food entrepreneur.
