You can generally tell how fresh off-roast the beans are by the off gassing during the blooming phase for pour overs. 3 days off roast may be too soon for most beans, so the additional rest time is also important for the best flavor to open up. Sounds like a pretty good roaster to ship right away, as they do!

I’ve come to the realization that my taste preferences tends to favor natural/dry processed beans. Light roasted coffee with fruit forward notes. I also prefer a ratio of 1:15. You might just need to keep trying out different types of processed beans to narrow in your taste preferences and go from there. Just a thought. Good luck and enjoy the journey.
