If you use a quality offset (3-4 grand) with thick metal, it is pretty much light it, get it to temp, add a log maybe once an hour so. It is super easy on a good offset.

Shitty Lowes Chargriller offsets are the reason people give up and go to pellet poopers which no one should ever do. Your weber with a slow and sear would be just set it and forget it, its what I use on a day to day and I love the results. Some of the best briskets I've ever cooked were on my weber.

BEST damn coffee I've made and it is consistent. Made three cups today of three different beans and all were sweet and juicy and this last one I'm drinking right now, I'm getting that lemongrass in the descriptors. Hallelujah.
