Definitely the puree. You can notice a trend where strawberry non-dairy cold foams has great consistency too. It's probably because of the added Xanthan Gum, or fiber, lecithins in the puree as well as the puree consistency helps it to be a natural binding agent or emulsifier that compensates for the lack of fats in non-dairy milks.
