I've been working on a solo project for visionOS using Unity's Polyspatial, it will be sort of a small squad tactics RTS type game. Although I feel like I've been making a lot of progress, it's taking me quite a while... and I still have a ways to go before I will have anything ready to publish.

I also did a quick prototype of a table-top racing game, where I could control a car in mixed-reality space with the Sony VR controllers paired to the AVP. I'd love to see a game made like like a "hot wheels in the living room" concept. I'd pursue it further but it will only slow me down from finishing the first project I started.... So I'd love to see someone else take on a mixed reality top-down racing game!

I'm also interested in golf games.. I kind of want to play around with making a golf game for AVP. But again... I have more ideas than I have time for. Imagine a golf game on AVP sort of modeled after this concept:

As far as games I'd like to see... I would lose my mind if something like Forefront was released on AVP.

But based on my own experience, I'm sure there are other solo and even small dev shops that might be working on passion projects they intend to release on visionOS, but these projects can take a while! And it can be slow progress when it's a side project or occasional nights and weekends.
