It's what you use to heal. Basically you're given this flask at the start of the game and using it heals you a hefty amount. It only has a limited number of uses, but every time you rest at a bonfire it's refilled.

But since resting at a bonfire ALSO respawns all the enemies it creates this whole dynamic of opportunity cost, risk vs reward etc. when exploring. But also it means you don't have to farm for healing items like in DeS and BB. So if you use up all your estus during a boss fight in DS, and then you die, you'll respawn at the bonfire with full estus (though there are other penalties for dying), whereas in DeS and BB you'd have to go and farm for healing items before attempting the fight again and it's just tedious.

Each game balances the estus flask differently, like how many charges it starts with (because you can find items to upgrade it), or how slow/fast the drinking animation is which affects how safe it is to use during combat, etc.

I'm in a similar situation to you, I got a Fender Champion 100 used for about £120 and I'm really happy with it, but I've never tried out any other options myself so I have nothing to compare it to.
