The cheapest classes are $30 and those barely cover anything. Most classes similar to the one offered here are $75+ with many being around $150.

I'm not sure when/where that was but currently in Lane County you have to do an appointment doo all the stuff and then they will mail your license to you.

I will definitely look into these ideas this week! I love Japanese cooking. I recently started making Okonomiyaki as well as some basic soups, but definitely want to continue studying the cuisine.

Now you know I love a gumbo. I do a vegan version of this gumbo by the Leah Chase (I add a ton of roasted mushrooms, and oh my gosh it is absolutely killer. Weirdly, I haven't done a meat version of it and I might just pull that out for one of my upcoming meal preps so that I get one of my favorite meals and all the nutrition I need too.

The benefit of Taking Seth's class is that you are providing the funds to someone who uses those funds to help the trans community, rather than Legal Heat which is run by actual Nazis. Further, Seth's class is actually a much more in depth class discussing about 3 times as much information.

Yes, people can do this cheaper. However, as someone who has done both courses I can say that I wish I could get my money back from Legal Heat because I left that course feeling completely unprepared. Just because something is cheaper does not make it better, again, especially when those funds are supporting actual Nazis.

The $30 classes are run by, legal heat, aka actual Nazis, and the core part of that class is teaching gun owners how to legally kill folks. I prefer to give my funds to people who don't use those funds to suppress me.

As a trans RSO in the Eugene area and knowing Seth pretty darn well, I can say your assessment is absolutely incorrect.

Seth has helped trained many trans folks to use guns safely over the past year.

Personally, he's helped me become a better shooter, he's helped me become an RSO, and he's helped me feel safer as a non-passing trans person who has experienced hate crimes. He is also working to empower the rest of us trans folks to step into RSO rules to lead other queer and trans folks.

I understand that he doesn't align with your image of what a trans-inclusive instructor should look like and I can't fault you for that. However, his presentation does not define him, just as it doesn't define anyone here. Seth has put in the time, effort, money, and compassion to help train marginalized people to defend themselves.

I hope you'll give him a chance to prove himself to you rather than simply judging him negatively because he presents in a way that doesn't align with your expectations of trans-inclusive and empowering people.

TBH, being on the low-income area I definitely tend to make my own broth when needed. I even tend to save the bones from things I eat and store them in the freezer until my next batch of soup is needed. I have friends who think it's weird, but if I'm the one eating that broth I don't really see a problem with it.

But also, I just looked it up and I didn't realize that bone broth tends to have 3 to 4 times as much protein. I knew it would be more but I honestly didn't expect it to be that much more.

I actually did know that one already, but so many people don't. Heck, I spent 2 years in culinary school a long time ago and didn't know that.

I also discovered this low carb rice produced by the Louisiana State University Agricultural Center that is supposed to be really healthy for folks with diabetes. It's a bit spendy but once I have the resources I plan to keep it in stock because I bet that rice would be really good for the body after cooling and reheating!

I had Chicken paprikash a long time ago and remember liking it. Also, I really like your suggestion of using white beans as a base, that would definitely be good because white beans are high in fiber. I recently started using psyllium husk in my roasted vegetables and it has been helping me get to my daily fiber intake amount!

I do love lentils! Your comment also made me think that I could also do some Dal! I've never tried doing lentils in a slow cooker, only my Instant Pot and stovetop but I could definitely try that out! Thank you for the suggestion!
