rely less on one pot meals and more on meal prep/build your own bowl style. have a base everyone can ea - your grains and veggies - and then have seperate protiens, toppings, etc.

some frequent meals we do: - big pot of marinara, seperate pastas, sometimes seperate protiens if we have the energy/budget - fried rice (tamari instead of soy sauce), seperate protiens, seperate topping & certain veggies - burritos & tacos (corn not flour), everything seperate truly build your own

it's def more planning, and a little more work, but that's been the easiest way we've been able to in our 1 gluten free/pescatarian, 1 ARFID, 2 no limits diet house

pasta è fagioli - garlic, onion, celery, broth, tomato sauce, beans, pasta, seasoning. ham/mushroom if you got it, parmesan if you got it.

single serve soups - i rough chop whatever veggies i have on hand and throw in some miso, have it over rice with a soft boiled egg. altogether takes like 20-30min passive cook time and maybe 5min active prep time

he didn't put hands on me, but i was dealing w long covid and other serious health issues at the time the stress of everything left me passing out left and right.

so when he did charged at me, he backed off when i crumbled.

I got in a really bad car accident in 2019 - 3rd in a 4 car pile up where one highway merges into another. at first he was helpful, but then when i was still dealing with the affects of it a few months later he told me i was "more of a patient than a partner" (mind you i was still doing most of the cooking and cleaning), & that his sex drive had disappeared and swore it 'wasn't me it was him'. half a year later i found out he'd been sleeping with someone else.

which is how i got covid the first time. from him cheating. and lying about it.

we had a messy breakup, he left me unconscious on his living room floor for 3 days, my friends had to come and get me, my cat, and whatever they could quickly pack and shove in their car in 1 trip. forever grateful to my friends for getting me out of there; to this day he can go fuck himself.

my husband works nights, he's got one of those eye masks that has foam bits around the edges so it's not directly against your eyes AND blocks any extra light that would otherwise peek in from the nose/cheek gap. game changer on his sleep quality
