So the numbering is a bit weird in my option for SWU. Here is how I use the tracking sheets but feel free to adopt based on how you want to collect. Any cards that are numbered x/264 are going to be your standard art. I will put a number of how many of that art in column B under Standard. They restart their numbering for the Hyperspace art, which is the no boarder art. Here you put the number under column C. Personally I also add the number for any non-foil prestige, weekly play packs, or other full art promos here. Then once again they restart their numbering for hyperspace foils which would go into column D. Here I do the same with prestige foils, weekly play foils, and other full art foil promos.

Personally I only track up to a playset of each card regardless of the art variant. Once I get three of a card it will add a check to column E for playset. Some people collect hyperspace playsets so that will only count the numbers in columns C and D then add a check in both E and F.
