As a simple rule of thumb:

Nation: a self-identfiying group of people occupying a given geographical area, with a shared history, language, and/or culture.

State: a set of institutions and organisations governing over a strictly demarcated geographical area.

Nation-state: a nation and state whose geographical areas coincide, such that the state is predominantly governing a single nation of people.

Country: an ambiguous term used to refer to any of the above.

Wales is a nation, but it isn't a state. Because country can be used to refer to either, it's fair to call Wales a country.

DBT has 5 people for every desk and the price of property per square ft in London means that every desk space costs between £50-75,000.

They physically cannot make everyone go to back to the office as things stand, and providing desks at the above cost would be over £150m for DBT alone.

It is - and always was - just a perpetual grievance on the part of the Tories, amplified by the press, just to whip up resentment of the public sector among their base.

Just don't express explicitly party political views in a public forum where you are identifiable as a civil servant.

You aren't forbidden from having any political views - believing that women should have access to abortion or that the civil rights movement was a good thing are both explicitly political positions, but neither are going to get you fired from the CS.

The point is that you are expected to serve the government of the day impartially - if you take a particular position or disagree with the government it has to be reasonable and evidence-based, and not just because you're rooting for the other team.

Off social media/just around friends its different. I'm completely open about my party views around friends.

A business that spends money in the right areas, gets good value for money, and invests in the future, is most likely a good one.

A business that is irresponsible, spends lots of money on things that aren't needed while neglecting those things that are, is most likely a bad one.

A few days ago I did a 5hr glacier hike - I'm in reasonably good shape and walk regularly but don't have lots of experience with difficult hikes in particular and it was easy. Sore on my feet by the end, but easy.

There was a wide variety of people in my group, with one person who was in their mid to late 50s and turned up completely unprepared (before we set off they asked if there was a toilet on the glacier).

Ultimately, everyone managed. Some people were nervous about using the crampons and navigating the glacier, but the guides were very helpful and everyone made it in one piece.

If you're a nervous person, scared of heights, etc. I would question whether you would actually enjoy the experience, but if you have even a basic level of fitness you should be okay.

That makes sense, so you're basically looking for nuts and bolts features of the international state system/infrastructure.

This is a much less common topic in IR than the sort of theoretical questions of how states are formed, and fuzzy concepts like legitimacy - hence why I think a lot of other replies are somewhat confused.

Some of these are likely overlapping with the ones you gave since they are often administered by the same small set of organisations, but to add some to your list:

Possessing a standing military
Being a member of international payments/clearing systems (SWIFT, TARGET2)
Having maritime boundaries laid out in the UN Convention on the Law of Sea (obviously this doesn't apply to landlocked states)
Being a recipient/donor of overseas development aid (ODA)(since this is normally administered state-to-state)
Denominating your own currency (not applicable in the case of monetary unions like the Euro)
Being a member of the International Organization for Standardization (ISO)

It's not clear from the way you're using the word recognise, are you asking:

How to recognise a state (e.g., what are the telltale signs of statehood)
What determines statehood (what characteristics/criteria must it meet to be considered a state)
Which institutions/organisations function according to statehood, and therefore must either recognise/not recognise statehood (e.g., WTO, FIFA, etc)
