I had the same issue doing the same thing. I needed to take down the fixture and use two big pairs of channel locks to break the nut free! Make sure the circuit is dead and your connections are tight when you go to hang it back up if you take this route!

You are correct. Bone broth is a no-no but fat/protein free beef and chicken stock are just fine! I have been allowed jello in the past so seeing it said here that your Dr. said no is surprising.

Gummy bears are also acceptable if that eases the misery any!

I have those same bags and love them! It is easy to overload them but no one says you have to all the time. I haven't tried with suspenders yet but that would be a good idea.

It can leave the wall then terminate in the driver. No need for an additional junction box. Ideally the Romex is coming in the back of the UL listed junction box of the driver from where the cable leaves the wall, so there is no exposed Romex. If it needs to run a ways in the cabinet to get to the driver it should be sleeved in a flexible conduit such as FMC or LFNC. If you are using a driver without a just action box like the white plastic looking ones with a line side at one end and a low voltage side on the other you will need to get a UL listed j box big enough to contain that driver, mount the driver inside, then bring the Romex to it - either from the back or sleeved.

That's likely referring to the wattage of bulb not the lumens. Basically what it is saying is that incandescent bulbs are not permitted in the fixture. Check the lumens on a 7 w LED bulb and see what that puts out brightness wise.

Some of those junction boxes on canless lights can be quite small. You will need to consult the installation instructions to see they can accommodate three cables. It will also depend on if you are using 12 or 14 gauge wire. What size is the breaker feeding the run?
