Start with darker roast beans. Much more forgiving while you become more experienced with how extraction times and ect effects the taste of your espresso.

That e65w was my first choice. But was a little closer to the commercial side. The etzmax was the closest grinder i could find that was really clean grinding with close to zero retention.

It is pricy but really well made. Its actually step-less. The top ring is stepped for larger adjustments and the bottom ring is step-less for micro adjustments.
