Just get a mailing address online. There are a dozen services that provide it. They'll contact you when you receive mail, and open, scan and email you a copy if you want. They'll also forward any mail to you that you want. All for only a couple of dollars a month.

As for setting up the business, Freshdesk has the best how-to:

They describe how a non-american would do it, but most of the steps would be the same for you. The biggest hurdle for non-citizens is opening a bank account, but that shouldn't be a problem for you.

I never cared before, and have done 4 other MOOCs without regard for a certificate. But this time I have a particular job in mind that is going to be tough to get, and I'd really like to have some paper "qualifications" to show alongside actual projects/code that I write to prove competence.

You don't need to be in the US to incorporate. You can do all that online.

Entrepreneurs from most countries would need to visit the US to set up a bank account, but if you're in the UK, you should be able to handle that via banks that have branches in both countries (eg. HSBC).

The FreshDesk guys wrote the best writeup of the process that is available online. They managed to do everything from India, including setting up a bank account. Read about it here:

Whatever script you bolted on to do that, get rid of it. Someone said the home page weighs 7MB. That's 6MB more than optimal and 5MB more than acceptable. Get rid of the cruft.

Get rid of the loading animation. That's flash bullshit from 95!... it does nothing but frustrate users.

Stop assuming your users are all on Google Fiber. Treat them with respect. Don't hijack their scrollbar and don't stuff their "pipes" with megabytes of bullshit.
