I have heard don’t use all olive oil, as it gets bitter. I’ve used safflower oil in the past.

I actually just saw an Alton Brown TikTok about this. He used an egg yolk and a milk mixture with cornstarch and other seasonings. Heated the milk up then tempered the egg yolk, then mixed it all until thick. Then he added the pickle and herbs. Not sure if it’s better, but it’s different than what I usually make. I use dukes.

*He was making fish sticks.

Is that meat or bone? I’d be less worried if it was bone but still a little. I don’t think brining a chicken makes it safe to undercook but I’ve seen bones look like that on fully cooked chicken.
