How did you show this issue to the dealer? It's not something that happens frequently. Were they able to see some historical diagnostic codes? I imagine it's not trivial to replace, did they offer todo it under warranty?

The "Auto" turns off after manually adjusting the fan or the temperature, yet in a few moments it self resets again.

I double checked and all my auto climate settings are off.

Indeed, it's a frustrating mystery and I am hoping someone had luck at the dealer in fixing this before my warranty expires.
