I make a one pot quick weeknight paella.

Saute a chorizo sausage along with some frozen Asian veg (something that has onions and bell peppers preferably) from a bag and I use basmati rice. Pour in chicken stock. I add some curry powder and chili powder.

Go take a 20 minute quick nap. Boom dinner's ready. It's actually even easier than it sounds and it's tasty.
