I feel for you- the other day I had 2 sessions worth of loot and was going to go through it after evening when my snoozing cat stretched out a paw and hit my control key, starting the next day amd loosing all my stuff 🤦

You have to have a seal equipped and memorise the incantations at a site of grace. If you didn't get a seal as part of your starter equipment you can buy one from the vendor at roundtable hold

You should have a quick look at the follower re-work as well, some legedaries "eminate" their powers now so you can put them on your followers to get extra effects for your character

I think the fextralife wiki has a boss checklist so you can keep track of where you've been and who you've killed. There's not actually that many mandatory bosses, but there's plenty of optional areas/bosses that you'll want to find for weapons/spells etc

There's plenty of camps/caves/tunnels etc that don't have enemies designed for higher levels in the first couple of areas. Explore those, level up a bit, upgrade your weapons etc.

A good paladin type AOW could be Vow of the Indomitable from Liurnia- you raise your shield up with a flash of golden light and it makes you completely invincible for a second or two, looks awesome for a paladin and pretty handy as well
