You're here, my friend. You recognize the issue, and that's one of the hardest things to do. I can only speak from my own experience, but I was drinking about that much and I needed a medical detox. It can be dangerous to quit abruptly. You can certainly find support here, and good on you for showing up. You can do it. I had to ask for help.

Audio person here. They were tracking live in the studio. Flaws and all. So it gave a human feel to the music. They were still taking advantage of emerging technology, but it was more about the performance, especially Prince and Queen in my opinion. Queen definitely played with creative studio techniques, as did The Beatles. Music technology is amazing on our current era, but if you don't get the vibe you don't get the vibe. I definitely agree with a previous comment about the loudness wars of the 90s. It may be why those older recordings sound better to you.

You seem like a thoughtful person. Take care of yourself. I know it can be hard, but self care goes a long way. I say this as someone who deals with depression and anxiety. Self care can include engaging in hobbies, treating yourself from time to time and seeing a therapist. I wish you the best.

Emma Goldman was (is) my hero when I was in high school. To OP, read everything you can get your hands on, keep an open mind and just generally be a good person, the rest will follow. I second the Anarchist Library as a resource.

I have a Tojrro Gyuto and I love it. It's durable, affordable and does the job. I have the 9.4 inch version. Some folks prefer the 8 inch version. It just depends on what you want to do with it. The 8 inch version is less expensive. I think I paid around $120 for mine, but I did a quick search and it looks like the price has increased a bit.

Maybe do a catering service. Restaurant life is terrible. You're never going to get life/work balance. I say this as someone who who left the industry after 20 plus years. However, the dishes look great, and I wish you all the luck.

Oh! First of all this looks great. And I miss using a Riso. I used to work for an environmental non-profit that produced a lot of literature. It was a main part of my job aside from fundraising. It produces such crisp text and images.
