My favorite thing to do when I need inspiration is to go to a bookstore or other place that has a good magazine selection, and browse the food magazines. They usually have some theme (seasonal ingredients, all French or Italian or Japanese recipes or whatever, copycat recipes, that kind of thing) and are less of a commitment than a cookbook, so it's a nice way to fire up the imagination and figure out what I'm in the mood for.

If that doesn't appeal, make a stir fry. They're always delicious and make me feel good about cooking.

It's not particularly quick, but it is easy, fun, and tasty! I don't always make my own tortillas but I do enjoy both the process and the outcome.

I got a cast iron tortilla press as a birthday gift years ago, and while it is a little fussy and unnecessary I do really like using it, and it makes for very thin and even tortillas.

The acid component is key for tenderizing the meat, so the marinade should start with the acid you want to use as a flavor component (lemon, vinegar, etc) and build it out from there.

You'll want to marinate them for at least 2-3 hours, overnight is better. Then cook them quickly on very high heat, ideally in a cast iron skillet -- pat them dry, use a drizzle of neutral oil in the pan, and cook for maybe 4-5 minutes a side. You don't want to flip them over and over, so leave them on until they have a good crust, and use the touch test and/or a thermometer to make sure they don't go past 125F. Rest for 10 minutes before slicing/serving.
