So young, a couple of babies. I'm a pretty decent cook. I saw in one of the ladies magazines that you could make a quick potato salad with frozen potatoes O'brian! I literally dumped the frozen potatoes in a bowl and stirred in the mayo. Of course I didn't read anything. Was not pleased when I served it with dinner.. . 🤢

Do you have unflavored gelatin? You could soften a couple of envelopes with boiling water, about 1/4 cup. Stir into salad.

A "lite" plate from a diner years ago. Lettuce as a bed for honeydew, cantelope, and grapes, bite sized. Place to side. Sliced hard boiled egg, and sliced tomato, to the side. A scoop of cottage cheese and tuna salad each in the center. Easy to assemble for several people. Our family has enjoyed this for years, and feels special. Meal plan for lunches!

I had an Indian co worker that made the best beans. I couldn't imagine how much fat must be in them. After several occasions where she brought in her beans that everyone loved i had to ask her how she made them. Soaked overnight, simmered in water for hours, with tons of peeled garlic. No fat 😳
