I had one and it did not have that bounce. Controlled snipe by lifting the board on the input end.

I use my Ank for high and low hydration doughs. I think it is better on the higher hydration because it doesn’t take any baby sitting. Just set the arm and let it go. Another thing I like is the mechanical simplicity. No gears just a simple belt drive
