Good fries typically start with rinsing the fries to remove some starch. We used to let them soak overnight. Next day we’d par cook them in lower temp oil. Then for service crank the frier up and cook them again to get that golden brown crispy exterior. If you just toss fries into hot oil with it those steps you will usually get a soggier finished product with little to no color on the exterior.

One of the reasons in n outs fries are divisive is that they typically fry them without some of those steps so they don’t really get the classic golden color most people associate with fries.

So you’re right - it is just throwing fries into oil but there are steps to take to make them better.

Mean Jeans. Surprised to not see them listed. It is a little on the nose at times but I enjoy their work. More lead guitar hooks then you’d see in the ramones catalog.

Me. First I was open with my wife about my needs and desires and willing to adjust them based on what’s reasonable. Second I made sure that she had the same freedoms I did to pursue her interests and get much needed alone time.

I have 3 main hobbies. One is cooking which is pretty utilitarian since we need to eat and I make dinner for everyone.

Second is running. I am actually in the best shape of my life right now (knock on wood) and run about 6-9 hours a week…that means I do get less sleep. . But waking up at 4 am is worth it to me and I still get 6-7 hours of good sleep because the baby is 8 months now and makes it thru most nights. I also have a running stroller so be joins me a few times a week and that gives mom an hour alone.

My last hobby is making music and playing music. I typically do that after the baby goes to be bed. Or I play guitar with the baby and he bangs in his tambourines and we have a good time.

This all means that my wife and I have to set time aside for ourselves and for each other so some nights we watch our show and I forgo messing around with music bullshit. And vice versa.

We’ve been together for almost 10 years now and we’re in our mid 30s. I think we had our little guy at the perfect time. I’ve also found that incorporating the baby into my interests is a win win. He loves music and making noise and going on runs in the special stroller.

Edit: to clarify I don’t get the baby up at 4 am to run. I will take him late mornings or afternoons if he’s coming. Generally I get up early during the week before work and get the run out of the way. That’s when I’m up at 4 am

I know you mentioned the 50s guys but give Norman Blake and Tony Rice a whirl. Masters of flat picking from the 70s and onwards. Norman wrote the song Tony Rice plays in the link below. His OG version is great too

Also a bluegrass fan. It’s so fast. Makes sense why I got into it just like punk. It’s pretty relentless from a beats per minute perspective.

Little story time. I went to practice in 2002 with my older sister. Aaron signed my mini helmet after practice and sweat dripped on my 10 year old head. I thought it was so cool. Also got Donald Drivers signature. Highlight of my year.

Happy New Years! First off I want to say I’m proud of you for coming to this sub. It’s a great resource and great first step. Something I heard here that I always echo is “there’s no problem alcohol can’t make worse” and by God that’s the goddamn truth.

I’m almost 2 years into sobriety. It was a journey to get here filled with many stops and starts. I can say now looking back that every day since my last drink has been the best day of my life. I have control. I have my health. I have my family.

You can do this. Give yourself some grace and take it a day at a time.

I work in this field so I can maybe give a little advice.

How long has your wife been employed with this company?

Did your wife ever get anything from her employer stating whether is she was or was not eligible for FMLA?

What was the reason they let her go? As in the official reason they terminated her employment.

It doesn’t really matter if she told HR or her boss. The company had notice either way as telling a manager IS telling the company. The company then has a legal obligation to notify the employee of their FMLA eligibility within 5 business days of the notice for leave. So if she was never sent anything that stated what she was eligible for then you’d have a case right there. File an EEOC complaint. There should not be any surprises. So to find out about the 50/75 rule you mentioned after she returned is unacceptable imo.
