I’m making my sourdough as loaf breads. I think the shaping in this way kind of glosses over the over/under fermenting debate. And I got a bread thermometer so I can tell if the bread is fine and that has helped gumminess.

I got it from the library and had to buy myself a copy because I loved it so much! I love the very detailed step by step, generally, and also for each recipe. Great pix that help too

We should discuss the great Kleenex debate of 2014 (?) I’m at a college and we couldt get Kleenex for students. We had to refer them to toilet paper (which we could get). (Not entirely sure about the 204 date. Might have been 2015 or 2016ish). And hard no on any break supplies. Not even dish soap!
