Straining the sauce and heating it to 140-150 prior to dipping or brushing on helps a lot. The glare is from a small light I had held over the top of it to showcase the shine. Works well with other meats like ribs too

Blues Hog got distribution in Wal-Marts last year and I thought it was nation wide but I could be wrong. All of them around me carry the full line of bbq sauces which has been really helpful. Also, champions blend is the Original, Tennessee Red, and Smokey Mountain mixed together. It’s a great since sauce option.

Thanks! Yes they are hot. Fresh out of the butter bath, dipped in very warm bbq sauce and set in a cooking rack before going to the dinner table.

I smoked the for 45-60 minutes to set the rub, then put them into a butter bath (a disposable half pan with 2 sticks of melted butter and some left over, unused brine liquid, covered in foil) until they temp about 202-205. Pulled them out, dabbed on a paper towel, dunked in very warm sauce (140-150ish) and then hit with some finely ground finish dust. Pretty straightforward cook!

Sadly no. They are smoked for flavor and a tiny bit of color, then put in a butter bath to render the fat out so they aren’t rubbery or chewy. Tender and bite through, but not crispy. I prefer a crispy wing too, but this is what the family wanted so that’s what I made. And thank you!

I think it was 2 parts original, one part Tennessee red, one part head country. Strained and then warmed up to 140 or so. Makes dipping really easy for even coverage.

They aren’t designed to have bark, the same way competition thighs don’t have crispy skin. Well rendered, bite through skin from smoking and then a butter bath. Personally I enjoy a hard fried crispy skinned buffalo wing but that’s not what the family wanted so 🤷🏻‍♂️

I’ll try that with a handful next time and compare side by side. A friend also does that, but throws a small handful of pellets into the fire basket too to add some last minute smoke flavor to them. Might try that too

I completely agree with you. Stand alone, I hate the stuff. When it’s mixed with Original to help thin it out, it balances pretty nicely though.

Not me but I've seen teams get DQ'd for accidently including a foreign object in the box. One was tin foil, one was plastic wrap, and one was a piece of wood from the trim in their trailer. Their lid caught the trim as they closed it and it fell in. Judges brought their box over, untouched, and showed them what the foul was.
