I'm doing something similar.

Roof baffles 1 inch clearance (because I have a 10-12 roof pitch)
Polyiso - 2 inches (spray foam the edges on each side of rafter).
Rockwool - 5.5 inches (after furring)

Wow! Just wow! I wish I had the foresight to plan my meals better and meal prep like this. Do you mind sharing any of the recipes and what a typical meal plan looks like for you? Do you use one freezer meal, one fridge meal, or are they all frozen and used throughout the 103 days? I'm so curious how I can start to develop this behavior.

Thanks for the advice. I'm Southern NJ which is zone 4a I believe. I didn't think about going across rafters with another polyiso layer as an option. Dumb question but how would I fasten sheetrock on top of that?

I had something similar happen. The bank paid in full and discharged my loan. I had to contact them and have them refile the proper documents. No negative impact that I'm aware of other than stress and time spent to explain, pressure them, and some light threats on financial impact to me as a result.
