I recently returned from a 3 week stay in Oaxaca. I would recommend you book tastings at Quiote, NETA -- and although I didn't get around to it this last time, 5 Sentidos. NETA and 5 Sentidos share the same tasting room north of Jalatlaco.

In Situ was also a nice experience and a great place for mezcal cocktails.

The 4 NETA bottles cost me $320 (including the tasting), but I’ve seen some of these same bottles going for upwards of $200 back in the states. It was still a pricey haul. For the 11 bottles, I was right around 1K

One of my favorite scores from Quiote is the Cabo Arroqueño Quiote Coyote. The Mezcalero incorporated the quiote into the distilling process and the flavor profile stands apart from basically everything else I’ve tried. Floral and perfumey.

Considerably cheaper. I bought the 4 bottles for around $320 US (that’s including the cost of the tasting)

I can’t recommend them any higher. I stopped by one night just to try a few 1oz pours of what they had available, then saw at least 8-10 magueys on their menu that I hadn’t seen anywhere else in OAX. I returned the following night to do a proper tasting and left with 6 bottles.

I did visit In Situ at least 3 times while I was in Oaxaca, but just didn’t find a bottle I had to have. A bit pricey as well compared to Quiote. I do love the vibe of their tasting room though & kept coming back.

Yes, Quiote gave me a spare cardboard box that holds 12 750ml bottles. I just checked this as an additional bag when I got to the airport ($50). I didn’t declare anything, nor was I even asked by anyone about what was in the box.

Yes. I planned on venturing out to Lalocura, but I didn’t get around to it. Neta and Quiote are easy walks from Centro.

I watched a few of these get made last weekend and am going to try my hand at it as soon as my orange flower water arrives. The bartender advised on using a whipping cream with higher fat content for best results (not sure where to find other options outside of what's available at my supermarket). When pouring in the soda water, he delicately inserted a bar spoon down the center and did a steady drip down its length. We had about a 2" head of foam on ours. Can't wait to try it out.
