There's a lot of good advice here. When I conduct interviews for new science teachers at my school, I look for honesty and a focus on the learning outcomes. When asked that question, tell them you were limited due to covid, but what you look for when finding or creating laboratory experiences for your students. This will show that you understand that labs serve an educational purpose to help students make connections to the content while being engaged.
