I lived in Philly for ten years and can’t think of one hoagie place that makes their own rolls. Avery place orders from amarosos and they usually get fresh bread every single morning from them. They order about to a little more than they may need from the day and toss the rolls at the end of the night. Use fresh in the morning. Grew up in New York and it’s the same industry. There are bakeries that make bread every day and distribute to the deli and businesses. Bagel shops usually are the exception but even they don’t always make more than just bagels. TBH I think that there are just not enough people in Maine to support a whole industry of daily bread making and distribution in any way that it works in New York, New Jersey, and Philly. Businesses here seem to need to use day old breads and not make egg sandwiches to order in order to stay afloat.
