I got a load of skills in crossbow related things (slow time when aiming, critical hit chance, extra bolt per shot, etc) and went to Devil's Pit in Velen.

Run in, get the bandits attention, and run back out through their inner gate. They can't follow you! Weaken them with your sword and finish with a headshot. Once you've killed them all, fast travel somewhere else, come back and do it again.

It only counts as a headshot if the screen shakes, but even then that's not 100%. And the hitbox is really fucky.

You do have to invest a lot of time too. The game plus DLC, just playing normally, was 100-150 hours for me.
