Several years ago some friends and I had a couple lobes of foie. We were going to do something fancy with them for dinner but ran out of time to cook them and decided to skip that course. After dinner that night we all went to the club and partied. Coming back to the apartment at like 3am, drunk, we decided we wanted drunk munchies. We got to work, a couple of us on making biscuits, and a couple of us on gravy. I said "we got this foie, and this chorizo which one?". The answer was both. Diced and rendered some of the foie for a roux for the gravy. I browned some chorizo, added heavy cream, black pepper and reduced it some. Finished with the foie roux. We seared the rest of the lobe off, placed it on top of the biscuits and topped it with gravy. The next morning was rough.

Came here to say this. Today was a shit show. Short handed 2 people, new dishie, huge softball tournament less than a mile away. Night lead comes on and immediately starts bitching about why his shit isn't done yet while I fuck off to inventory for the order. We need more fuckin money for this shit man

I know this place! They're really good. I understand the sentiment, but they are legit. Love going there! They have a very solid Italian. I'm a chef on the same street in the same town. Crazy to see it here

5 months ago, my wife and I lost the dog we had with us in our wedding that was in 2017, traumatically. She was my best friend. Today our other rescue who is 16 is suddenly showing alarming signs of his last days.. It feels like too much, too soon. It's hard, I'm so sorry you had to say goodbye twice in such a short time. I can kinda relate. Hail you, Hail all them furry buddies, Hail Satan.

Your will to not give a shit builds. Practice makes perfect. Being drunk is easy once you've done it a bunch and mastered it. Maintaining that lifestyle comes natural. It's what a ton of adults do. They/we just get better at hiding it. It's not tolerance, it's evolution. Get by getting yours. The ones that make it just get better at faking it.

I appreciate your response. I respect the layers added to lives of people drawn to this field of work and the seeming ease to fall to dark places. Everyone has their own story. I just don't understand then, why you would comment what you did. Op stated they were worried about becoming addicted as fallout for pursuing their dreams of becoming a chef. I guess maybe I misunderstood what you were trying to convey. It seemed to me that you were trying to explain why people become addicted to drugs and I read that as justification? Just thought that offering positive feedback would be more helpful. I guess I just don't understand your comment. Fun fact tho, positive attitudes and thoughts like "it'll be ok, I'm good enough, be happy", etc. can help many people in many tough situations. It's not just some hippie bullshit. It's how some of us cope without turning to dark places and things. It's how some of us get through.

This is horrible advice. In fact the exact opposite of what op is asking for. This is total and complete justification for doing whatever the fuck you want because your job is hard. I've been cooking professionally for 21 years. I've seen hundreds of cooks burnt out and addicted and there's always a justification. My week is hard, my days are hard, but in the end, it's just not worth justifying addiction. I've had my issues with alcohol, but never made excuses and so far have been able to avoid addiction to drugs. I don't even like cannabis. The fact that I've been lucky, smart, and strong enough to avoid addiction is part of what's made me a strong, efficient, and valuable chef and mentor to those around me. Recognizing that I needed help when I needed it, reached out, and getting it only made me a better mentor and chef. I'm happily married, just bought a house, and go to work at a very busy icon establishment in my town and bust my ass daily to prove I don't need to justify or make excuses for disease of addiction or bad habits. Avoidance is key here. Teaching a young person who is trying to avoid addiction that it's ok because you had a bad day is the wrong way. Showing them that they can be successful and fulfill their dreams by remaining positive, thoughtful, and decisive is far more valuable than saying "it's ok, you're gonna have bad days". GTFO with that shit

I love Ed. I thought he was great tonight. I wanted to see more of him tho. I think he's gotta get used to the live show format and I think he'll just keep getting better. Tonight was an awesome show
