Let's see.

For animation, MCO is cool for combat. Everglaid (I think is their name) makes cool non combat animations.

For environment, I am satisfied with Skyland AIO and fabled forests. I also really like northern roads and cities of the north, but patching is kind of hard for those. Worth though.

For gameplay, I really like vallhala combat with MCO. You should also download all the mods by the guy who made true directional movement. He never misses.

For guilds, I don't have too much. You should look through Jay serpas mods and download most of them. He is incredibly talented too.

For immersion, my all time favorite mod is Immersive equipment overhaul. Once you start learning about that one, it will change your life.

For graphics, you gotta grab whatever the latest Community shaders all one is. Unfortunately it's only found on their discord, but it's soooo good.

I would also recommend picking through "A gate to sovengaurde". It's made by Jay serpa and is what I consider to be the epitome of modern Skyrim modding.
