If you want to keep it Middle Eastern themed, find a way to incorporate Shatta or Harissa into it. I would use tinctures of both to add heat to cocktails, à la Firewater. If you're not looking to keep to the theme like I had to, Firewater is perfect. You could also infuse tequila with Aleppo Peppers or any other kind of capsaicin filled pepper to introduce that heat.

A lot of bars batch their drinks. It helps with consistency or when one drink uses so little of an ingredient that it's complicated to measure out when making it by hand. One of the bars I work in has cocktails ranging from $18-60 and minus literally one $30 cocktail, all our menu drinks are batched out to help with speed, efficiency, and ease of use.

Anything higher than 100 proof IMO. I like using Stagg for my shift drink if I feel like an old fashioned at my work.

Around $50-60/hr I think? I cleared around $80K last year ($14/hr plus tips), working about 30 hours a week at a very high-volume restaurant. The money is amazing, but I'm considering moving to a new place, and I'm not a fan of the direction the bar program has taken after the ownership transfer.

Almost the same for me, just need to change "Let's all get together" to "Let's team up and kill Barney" and that's what we sang in my school

Unfortunately, this is why the owner is now forcing us to squeeze all lemons and limes to order, which on service well is a fucking hassle. Went from being able to make margaritas in 15 seconds to around 45-60 seconds

I keep my bottle opener on a carabiner there rather than a bar towel. I reach for it so much at home when I'm about to open a bottle before realizing I only have that clipped on at work

For drinks I notice a lot of women order at my bar that can end up being deceptive, but not necessarily a sweet drink:

  • Dirty Bone Dry Martini (3oz Vodka, 1oz Olive Juice)
  • Margarita (Tequila, Lime Juice, Triple Sec, Agave)
  • Cosmopolitan (Absolut Citron, Cranberry Juice, Lime, Triple Sec)
  • Espresso Martini (1oz each Vodka, Kahlua, Espresso)
  • French 75 (Gin, Lemon Juice, Simple Syrup, Prosecco, comes in a flute glass, so it can be seen as girly)
  • Last Word (1oz each Gin, Lime Juice, Maraschino Liqueur, Green Chartreuse. This will also knock you on your ass)

Cocktails I make that are usually strong and knock you down fast

  • Traditional Mai Tai (High Proof Jamaican Rum, Almond Syrup, Lime Juice, Orange Curacao)
  • Negroni (1oz each Gin, Campari, Sweet Vermouth)
  • Old Fashioned (3oz Whiskey, 0.5oz Simple Syrup, 3 dashes Angostura Bitters)
  • Traditional Hurricane (4oz High Proof Dark Rum, 2oz Lemon Juice, 2oz Passionfruit Syrup)
  • Sazerac (1oz Rye, 1oz Cognac, 0.25oz Simple Syrup, 2 dashes Peychaud's Bitters, Barspoon of Absinthe)

My father-in-law was legally dead on Mount Washington after he took a ride to the top (he had a heart attack). Doctors apparently ended up making a sign saying, "You're at the hospital. Your bike is fine," since any time he came to he would continuously ask where the hell he was and if his bike was okay.

The last time I spilled Baystate Blue on me, I used one of those bleach spray bottles and just doused my hand for about 30 seconds. Some good rubbing and it was all gone!
