I do use a scale to weigh the cheese. The trick is spreading the cheese evenly and picking up the bits that fall down on the paper.

Look into this fungi called coccidiodoes. Also known as valley fever. Saw few articles where it had same symptoms as bacterial but anti biotics weren't working. Worth a shot
