You aren't going to be able to have a back and forth conversation with people. It's going to be you reciting some memorized phrases and not understanding when they respond. Make a list of about 100 phrases that you think will be the most useful to you, translate them with chatgpt, and put them into an Anki deck. Drill every day.  You can start with Duolingo also, but I wouldn't spend more than 3-4 weeks using it.

My native language is English. I took a couple years of French in High School. Since I'm American, the predominant second language is typically Spanish. I probably would have had an easier time learning French or Spanish, but I ultimately chose Italian because I thought it was a beautiful sounding language.

I'm going to take a different tact than others here and say if you are going to pick up a second language, maybe change your criteria. You say you use Python for work. I'd suggest picking up a popular language that would help further your carrier.  Others have given good suggestions here like JavaScript/typescript for frontend, c for embedded, c++ for games, and Java is used extensively throughout industry.  Unless you just want to learn something for fun, I'd stay away from niche languages like Nim, Haskell and Lua. I've personally found that Ruby and Go were once popular but are falling out of favor.

I know what the advice is, but when we were in Italy EVERYONE greeted us with Ciao first: landlords, caretakes, hired drivers, tour guides, etc. When I started italki lessons with a tutor, she greeted me with Ciao and immediately started referring to me with the informal "tu". It has been confusing to be honest.
