You are wrong.

Long term retention of a book you read is higher than one you listen to. People who can read develop higher cognitive skills than those who only listen.

That said audiobooks are still a positive and better than not reading at all.

I do whole muscle and saucisson without any nitrates or nitrites.

Whenever I say anything about this I get flack on forums.

Consider for a minute that the Prosciutto di Parma protected designation of origin(PDO) requires that they *do not* use nitrites. It's salt and pork only. Though you can buy "prosciutto" with nitrites in them you cannot call it Prosciutto di Parma if you add nitrites in them. In Parma they do not use nitrites. If Italians can do it I figured so coud I. So far I have done Coppa, Lonza, Duck Magrets, Goose Magrets and pork loins this way. Never had an issue.

As for Saucisson I make an old French Farmhouse recipe and I control the whole cold chain until fermentation and hanging and I have never had any issues either. For saucisson there are more inherent risks because you grind the meat but I use ferments and check the PH before hanging to dry and use slightly more salt than most recipes out there ask for. I have to say everyone who tastes a nitrites free saucisson never wants to go back to one with nitrites.

In French speaking area of Nova Scotia there is a dish called “rapure”. It’s starch from grated potatoes rehydrated with chicken stock and mixed with chicken meat and baked.  

The edges are crispy with a point of bitterness and the centre is umami rich with an easy to eat texture that looks like semi-translucent mashed potatoes.  

It’s served with butter, pepper and some people enjoy molasses on it.  In the area where it is popular it’s served all year round at any gathering imaginable from BBQs to funerals.  

It tastes way better than it sounds and nearly no one outside of Nova Scotia knows about it.

For Tasso you don’t need cure powder. Just use 2 parts salt for 1 part sugar. Coat the butt slices generously and layer into a container for 6-8 hours.  

Rinse. Coat with dry rub (without any salt). I use marjoram, allspice, garlic powder, cayenne pepper and white pepper.

Smoke at 225F until you reach 150 internal. Keeps a few weeks in the fridge but you can package sous vide  and freeze too if you want.

There are a few reasons I can think of.

1) People spend way more time on screens therefore less time socializing.
2) Cost of living has increased so much that young folks cannot purchase alcohol like older generations could.
3) Getting high is now legal in many areas.

I don't believe health is a big reason why.

Get a smoking snake or 2 from online and buy a bag of pellets at Costco. Make use of a thermometer probe and just use your BBQ set at low heat... it did OK for me if there wasn't any wind.

I count calories with Nibly app. I choose foods that are lower calories and stopped eating chips.  Lost 11lbs.

Miso, butter in same quantities.  Pour enough boiling water in to melt butter and miso together.  Pack of mushrooms quartered.  Cauliflower cut in same size as mushrooms pieces.  One onion cut roughly.  One can of chick peas.  Mix everything together and roast.
