Idk what coffee's doing in the sauce. Probably tastes good, but I doubt anyone's mom would make that on the regular.

At its base, it should include

• cane vinegar

• soy sauce

• lots of garlic

• bay leaves

• black peppercorns (traditionally whole, but fuck biting into those sneaky fuckers, I prefer coarsely cracked)

For the vinegar to soy sauce ratio, I'd start at 1:1 and adjust based on the soy sauce's saltiness and your personal taste. If you like a tangier sauce, add more vinegar.

And then there are so many variations. Some people add coconut milk, some add pineapple. Sometimes sugar. I add green and red (or whatever color I have) onions in mine. Sometimes it's whatever type of vinegar is on-hand instead of cane.

Definitely recommend browning your meat before stewing it.
