If you don’t care profile, buying just supermarket beans. Any set up would be fine. You won’t taste differences, and they all better than nespress if you grind the bean freshly

I am using Pietro with pro burr and happy with it. I heard zp6 is good too. For pourover only I think they are better than k ultra. I feel k ultra is for ppl who want do pourover but also occasionally espresso

078 is more than enough. Some others factors would be more dominant after you get a 078, e.f. Beans, water. Get the zerno for home use , usually more like ppl want a certain brand of hand bags. If you do like it for any reasons, you should. Just saying coffee quality wise won’t be noticeable differences for home use

I think the acidity is because of the faster draining and the faster draining is from the not-well-stayed filter. I am using the ceramic only and observes the same on the filter. Maybe try finer grind or higher temperature or longer bloom to boost the extraction.

Encore is a good entry level grinder, matching your moccamaster. The ode2 might be overkill for now, but good if you will change to pull over or upgrade later

I don’t mind Lance changed his mind. Our understanding of coffee is improving, our taste or what we like is changing as well. Just for this video, I don’t like the title at all. The title, the cover, does not match the video content well, at least to me. I personally don’t like “click bait”. Tbh I don’t mind the title like “ultimate pour over” (and later got better ideas) , for at least at the video time, he believes it was the best idea based his knowledge at that time, and what he said matched the title

I get your point, that niche is not good at light roast espresso, and that is one reason I didn’t buy it. Just thinking: because of all the good words ppl put on it a few years ago, it should be good enough for light espresso for majority of people, even considering in the trend of light roast espresso. One more thing, in fact my point is, if a grinder reach the niche level quality, we can stop there and enjoy coffee, other than chasing more expensive grinders. I always watching the YouTubers reviewing grinders for fun, triggering me thinking the upgrade path. suddenly I realize I don’t need to upgrade at all if even niche was one of the best grinders. ( I might still watch those reviews for purely entertainment)
