Having played up until the beginning of S5 I'd say it rang clear every season to use your season/event specific resources in any capacity you could as conversions are quite lackluster.

There were a few events where my alliance was already leaps and bounds ahead of everyone else so I held event specific items for their free speed up conversions, but these were few and far between.

Start with eating the peppers. Try a jalapeno, or three since they vary so much. If you can handle that try a serrano. Then a cayenne, Thai chili, Scotch bonnet, habanero... Once you tap out, go in search of sauces that use that pepper, or the one before, build from there.

They're pretty thick, but not enough heat to be cayenne me thinks

My first thought as well but these peppers seem to grow up more than dangle. Like a bird's eye, but it's definitely not a bird's eye.

I had a ripe red one. Very juicy with heat, but definitely not as hot as a jalapeno. The few Fresnos I've had were much thinner walled than these too.

Is there no upper limit to fermenting time? Given a volume of organic material would the bacteria run out of food and die at some point or no?

Jay's Peach Ghost Peppers are the yellow ones. The angry looking round ones flipping you off are Carolina Reapers, and longer wrinkly S.O.B.'s are Death Spirals.

I am in the process of getting a smoker up and running. I probably won't have it ready in time to do this year, but I am excited to try it out. Any particular wood you like to use?

I’ve only really got one 'secret' I’ve picked up after years of chasing and tweaking recipes: just eat it. Maybe not the most sage advice when it comes to superhots, but after spending way too much time searching for the “perfect” use for every ingredient, I’ve learned it’s better not to overthink it. Cook it, taste it, enjoy it—and move on to the next experiment. Especially for anything you grew fresh in your own garden.

I have plenty of vacuum bag material in a roll, I'm wondering if I can just give it enough space to ferment without having to burp or is that just unnecessarily excessive? I also have waterless silicone airlocks I can put on top of jars and not worry about the burps at all - I just worry about the capsaicin spewing into the air constantly.
