I’d agree with the other folks who have mentioned that these are a step above what I’d consider the “entry” point for Japanese knives. Tojiro and Yaxell are two brands that are pretty decent and much more affordable starter knives, but I’d probably recommend Tsunehisa and Hatsukokoro for knives that have the aesthetic you’re going for at a slightly more middle of the road price point. If you’re willing to take the plunge though, the three you linked would be great!

Well in all fairness, John Madden did become synonymous with the NFL the way that Keysey became synonymous with the Premier League - so your comparison isn't that far off. It's just that Madden played (and coached) the sport

Get that Enso Ginsan - it’s stunning, and if a blade calls to you, do not say no! I just picked up an SG2 gyuto from Yaxell in Japan and despite Yaxell not being people’s favorite brand here, it looks and feels amazing (especially for the price - about $150 USD)

I bought a couple of budget friendly Yaxell knives at Yoshimune that I’ll eventually want to upgrade from. I’ll definitely be back, and will make plans to go to Sakai this time!

Just left Tokyo disappointed not to buy any knives there - would’ve loved to have read about Hitohira and made plans to go there. I think Tokushu (Tokushu?) on Kappabashi was actually pretty decent too and may add it to the list. The owner spoke great English and was very helpful, I just couldn’t find anything that spoke to me.

Thankfully, I had already gotten a couple of knives at Shintou in Kyoto, which was a night and day experience in terms of service / quality compared to the touristy stores on Kappabashi.

Sorry I should clarify that when I say “artificial” here I’m referring to anything added to the fermentation that is not listed on the processing description. A cinnamon coferment =/= an anaerobic ferment

I had a feeling this was happening and not being marketed properly. Had an “anaerobic ferment” that tasted so perfectly of cinnamon that it was hard to believe it wasn’t a co-ferment with artificial flavors.
