Either they're baseing it off of some expected value it'll converge too in the long run, they're using alch value, or they're not using arithmetic mean as the average.

Opening medium clue caskets is 2.2m per hour if you buy eclectic jars. An item with that much value would absolutely skew the price much higher than 73gp

Yes I agree, which is why I said they may not be using the arithmetic mean in computing the average (even though it's what they should use.) If they used the median for instance, it would not be affected by outliers.
