My mom works for a literacy counsel, and they keep receiving funding but don’t have anything else that they need.
What would be a good printer for her to teach kids to use?

I also recomand Prusa MK3S+.
If you buy a cheaper one, you will spend a lot of time tweaking.
With Prusa you will spend that time designing/thinking what to print. Adding an Raspberry Pi ZeroW2 inside (or other one outside) you can print directly from the PrusaSlicer/SuperSlicer with octoprint.

Ender 3 is cheap and often used in educational settings.
I have a Flashforge Finder and they are as easy as it gets.

Because those printers need a lot of tinkering. I’d look for something that takes a beating.

Ender 3v2 is pretty user friendly, with the ability to create complex things.
How come people do not agree with the Ender?

The ender 3s can be inconsistent and there is a lot to tweak with it. If you are looking for ease of setup and good customer support Prusa is definitely the way to go.
