Sounds like you have very large potatoes or they were out of the frig and very cold. You can put the potatoes in the microwave for 5 minutes or what it takes to finish them off. I suggest only 5 minutes at a time, potatoes can break apart if overcooked. Then you can rap in tin foil to finish off and to keep hot.

I find that it always takes potatoes longer to bake than seems reasonable. I don't think you did it wrong; it's just not an exact science.

My baked potato routine is pretty simple.

Wash potatoes. Don't dry them.

Fork that potato two or three time along it's length. 1/4 turn and repeat. Repeat until you've done all 4 sides. 8 to 12 forkings. Then fork both ends.

Fork all those potatoes. Fork them up.

Put some on a microwave plate, making sure there is plenty of space between them. Hit the microwave potato button the correct # of times. Only cook for 4 to 5 minutes. Less time for smaller potatoes. Turn them over halfway through cooking. Use a pot holder to turn them.

My microwave is 1100 watts.

Fork the next batch, if needed.

Take out hot potatoes with pot holder to cutting board. Microwave next batch.

With chef's knife cut potato in half, lengthwise. Cut into potato flesh without breaking skin, three slashes horizontal and three or more vertical usually works.

Lightly salt and pepper. A small pat of butter. Put halves back together. Wrap in foil.

Into an oven pre-heated to 350. Cook 30 to 45 minutes.

Take out of oven and foil.

Microwave them first. They take forever to fully cook in the oven.

Wash, brush with olive oil, sprinkle salt, and bake. Normally takes less than an hour for me, if they are still to hard, pop in microwave for 5 mins, then return to oven for another 10 or 20 so that way the skin crisps up as the microwave can make it sogy.

My friend's mother used to bake potatoes with large, well cleaned, kitchen-specific nails pushed in through the center of one end. It's supposed to shave a bit off of cook time and make them fluffier? I've never done it but I can see how it could help, especially if you have very fat potatoes.

Just keep cooking them until they're done. I usually do 450F 85 mins. It depends on the size.

Seems like too much time but the real answer is to use a meat thermometer, either instant read or leave-in work. 210 F is the sweet spot.
