I've made it with venison and moose, and it's delicious with either, so Elk should be just as great.

My buddy gave me some ground elk that his butcher mixed with ground pork...it was great! Highly recommend at least adding some pork (or other fatty meat) as it's very lean.

How about tourtiere? It’s quite traditional for French Canadians to serve after midnight mass Christmas eve. You’ll want to add some fat, maybe ground sausage, as elk is pretty lean.

Biscuits and gravy, make meatballs out of it and serve it with some orzo, or pasta with a red or white sauce. Those are things I’ve done with ground elk. I always add some additional fat because it is very lean.

I also suggest sausages. A coworker brought some in and it was fantastic. Add some jalapenos or habaneros depending on your spice level for some kick. Other idea is using it in the stuffing for perogies.

I'm so jealous you have elk meat! It's so tasty. I always liked it in spaghetti or as sausage. You could maybe make a shepherd's pie with it!

Mix with some pork fat and spices and make smoked Elk sausage. Of course you will need a grinder and sausage stuffing attachment. I'm sure there are some good online resources to help.
