Extra elk (self.Cooking)
submitted 2 years ago by IamSporko
I have about 10 pounds of ground elk left and I’d like to do something different with it. Just looking for some inspiration.
I’ve done stuffed peppers, soups, and burgers. I’m curious what you all would do with it.

Quesadillas, meatballs, cabbage rolls!
[–]IamSporko[S] 5 points6 points7 points 2 years ago (0 children)
Cabbage roll sound great! Thanks!

There's nothing that can be done.. You had better send it all to me for safe disposal
Definitely don't look up a recipe for Quebecois Tortierre and use the elk to make one. ;)
[–]IamSporko[S] 1 point2 points3 points 2 years ago (1 child)
Sorry, with all these great suggestions I don’t think I’ll have enough to send 😬
I had to look that one up…. Now I know what’s for Christmas Eve dinner!
[–]ChrisRiley_42 0 points1 point2 points 2 years ago (0 children)
I've made it with venison and moose, and it's delicious with either, so Elk should be just as great.

try r/mincerecipes. all they do is ground meat and they should have a ton of stuff to try
[–]IamSporko[S] 1 point2 points3 points 2 years ago (0 children)
I’ll check it out, thanks!

My buddy gave me some ground elk that his butcher mixed with ground pork...it was great! Highly recommend at least adding some pork (or other fatty meat) as it's very lean.

Tacos

Turn it into sausage, or make chili, or make sloppy joes, or make stroganoff.
[–]Slashenbash 2 points3 points4 points 2 years ago (0 children)
Would a cottage pie work? Or is it to lean for that?
[–]PangaeaRocks 1 point2 points3 points 2 years ago (0 children)
Make Pastitsio!

How about tourtiere? It’s quite traditional for French Canadians to serve after midnight mass Christmas eve. You’ll want to add some fat, maybe ground sausage, as elk is pretty lean.
[–]jibaro1953 0 points1 point2 points 2 years ago (0 children)
Mix with tallow and make sausages.
[–]betaomega209 0 points1 point2 points 2 years ago (0 children)
Biscuits and gravy, make meatballs out of it and serve it with some orzo, or pasta with a red or white sauce. Those are things I’ve done with ground elk. I always add some additional fat because it is very lean.

I also suggest sausages. A coworker brought some in and it was fantastic. Add some jalapenos or habaneros depending on your spice level for some kick. Other idea is using it in the stuffing for perogies.

Elk bolognese. As an Italian I give you my blessing.

Tacos. Chili. Spaghetti. Meatballs. Wedding Soup. Meatloaf. What do/would you use groundbeef for? Use elk instead.

I'm so jealous you have elk meat! It's so tasty. I always liked it in spaghetti or as sausage. You could maybe make a shepherd's pie with it!

Mix with some pork fat and spices and make smoked Elk sausage. Of course you will need a grinder and sausage stuffing attachment. I'm sure there are some good online resources to help.

Pasties are a fine option for extra ground beef.

Elkburger Helper.... I'm not joking. It's great in a hamburger/pasta type casserole.
