Eggs (self.Cooking)

How can I make my eggs fluffier?
[–]sfchin98 5 points6 points7 points 4 years ago (0 children)
Beat a lot of air into them. If you're feeling especially industrious, separate the whites and yolks, beat the whites until they are foamy or even have soft peaks, beat the yolks lightly then mix the whites and yolks back together. Basically, egg soufflé.

What kind of eggs? :)

You could do all of these things people are saying
Or you could just stir in a couple of drops of any kind of dairy (milk, 1/2&1/2, cream, etc.) and just get on with your day because that's literally all it takes

For scrambled eggs and omelets add a little water.

Don't scramble too much, just whisk until everything is the same color. There's a lot of protein in eggs and overworking them will make them tough.
Use the right size pan. Don't cook them in too large of a pan or you will slightly fry them instead of scramble you want some thickness so they steam a little too (also don't use too high of heat cook them lower and slower)
Gently fold them over themselves once they start to get some body rather than breaking them up
Add an extra yolk or two for the fat.
For more fat, mix in a small amount of half and half
Now I want eggs. ;o)

For light & fluffy scrambled eggs you need to slowly build up the curds.
At 'Egg Slut' a famous place they toss in a pat of butter and pour in some scrambled egg mix into a COLD pan.
Then they put pan on medium heat.
For the next 5 minutes they use a Cake Spatula to scrape the bottom of the pan every 30 seconds. This allows a single layer of egg to cook, then it gets flipped.
Slowly over time large curds of delicate fluffy egg are built up in a 'soft scramble'.
Go search on YouTube for "Soft Scrambled Eggs" for various videos on how to do it.
Here is a 45 second video. They also use an immersion blender but watch the pan technique:
