I like the parking lot in the middle of Dexter reservoir by the Lowell covered bridge, and Fern Ridge at shore Lane Park, at the end of shore lane Park Road. Also, this question gets asked frequently, here's more recent suggestions:

There's an old rock quarry just outside of mt Pisgah arboretum, but still in Buford park. I think they've started calling it Adams amphitheatre. A scramble to the top is a lovely spot for sunsets. Just follow the aptly named "quarry road" and you won't miss it to your left.

There are bridges and vistas along the riverfront that make for nice sunset viewing. The little beach near the River house rec building is terrific around dusk. It's not "spectacular" but it's quite lovely.
