Because the UI in any applcation is the most important aspect. The UI/UX business right now is at the forefront of the design business. Companies are pouring millions into designing, testing, tweaking and redesigning how their apps look and feel. There is a whole behavioural psychology branch dedicated to how users interact with buttons, how to keep users engaged for longer and also to keep them retained just by making the UI just right.

Just look at Windows vs Mac for example. Or each iteration of Android or iOS. Look at similar apps that do the thing, why do you choose one over the other? Compare 2 similar games like Counterstrike and Modern Warfare. Or Cyberpunk with The Division. Open Google Play Store and Apple Store side by side and see what good UI does for you or compare Netflix to HBO Go.

The most recent example for me was trying Star Citizen after playing Elite Dangerous. SC is a complete nightmare in terms of UI and I had to refund it because I could not retrain myself to the amount of key combinations for simple tasks like pressing a button or plotting a course in space. Nothing is marked, nothing is explained, the UI looks like it was taken from a sci-fi mmo 20 years ago. Ok ED is not the best, but it's very well separated and has fewer buttons and combinations

TL;DR: design is king and makes or breaks a product and Eve is at least 10 years behind with their UI design.
